Healthy Cherry Bakewells

This recipe came about because one of my best friends absolutely loves them and so it took it upon myself to create a version that is guilt free but equally delicious and importantly, no compromise in taste! They are so easy to make and so quick, you will definitely never look back..



  • 1.5 cups blended oats
  • 1 egg
  • 1/4 cup almond milk
  • 1 tsp vanilla essence
  • 2 tbsp honey

  • Cherry jam
    OR if you want to make your own, mix up the below - I will be doing a separate post on this soon!
  • 2 cups frozen pitted cherries, thawed
  • 2 tbsp honey
  • 2 tbsp chia seed

  • 2 tbsp quark
  • 1/2 tsp vanilla essence 
  • or

First, blend up the 'base' into a dough mixture and press into/around the side cupcake cases to make a base  - I use the reusable rubber ones. Add in a little jam, not too much as they will overflow! Bake these for around 10 minutes on 180 degrees, they should start to brown and form a proper crust.

Next, once these are cooked allow to cool fully. While this is going on, whiz up the topped and pop into the freezer for 10-15 minutes so it sets a little (always taste test and lick the spoon.. essential part!). Once ready, and the base is cool pop on top using a spoon and of course a cherry to finish.
