Healthy White Chocolate and Raspberry Blondies


So after having several taste testers giving me the all clear, I would finally like to share this recipe with you.. trust me. You WONT look back, other than to make sure you have written down the recipe to make another batch!

Ingredients

  • 60g Frozen Raspberries
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1 1/2 cups spelt or coconut flour
  • 250g chopped or roughly broken white chocolate
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract

How to?

Pre heat the oven to 180 degrees and grease a loaf tin, I usually grease and line it with grease proof paper to ensure it comes out as one! 

In a food processor (I use for speed) mix the honey, eggs and vanilla together then throw in (trying not to make too much of a mess!) the flour and baking powder followed by the coconut oil then folding in the chocolate! At this point I believe it is essential to grab a spoon and taste test.. that's the best part right? Pop all of this into your tin.

Microwave the raspberries for 30 seconds to defrost them a little then moosh (thats a word right?) them to make them even more delicious - tip these on top of the batter and swirl them a little using a skewer.

Bake for around 20 minutes but check regularly to ensure they remain all gooey and mmm!

Then enjoy.. allow to cool a little if possible!
