Blackberry Cheesecake Brownies


So, September is blackberry season and since one of my clients kindly let me pick a few (whole punnet 😍) from their land I thought what can I make that is different (as always trying to create new and exciting ideas to share!) and delicious and here is it... Blackberry Cheesecake Brownies!!

They taste sooo good I can't keep this one to myself..

Brownie Layer

  • 1/4 cup cacao powder
  • 1/4 cup honey
  • 3 eggs
  • 1/4 cup coconut oil
  • 2 tbsp vanilla extract
  • Pinch of sea salt


    Blackberry Puree
  • 8 oz frozen or fresh blackberries
  • 1/4 cup honey
  • 1/4 cup water

    Cheesecake
  • 1 tbsp cream cheese
  • 1/2 cup greek yoghurt
  • 1 egg
  • 1/4 cup honey
  • pinch of sea salt

I realise you may be thinking that seems a fair few ingredients but I hope that MOST of them you should have in your cupboard.. 

How to..

Start by making the blackberry puree so it has time to cool off before swirling it into the cheesecake layer! So, combine all the ingredients in a small saucepan over a medium heat for around 8-10 minutes. Make sure you smoosh the blackberries so they are broken up. Next, strain using a fined mesh (I used a sieve) using a spatula squeeze out the liquid and place the rest to one side (don't throw this as you can use this on your zoats or greek yog!!) allow this to cool.

Next, pre heat the oven to 180 degrees and line your brownie baking tray with baking paper. Mix all the ingredients together and pop into the baking tray speading it evenly and into all edges.

Then, time to tackle that cheesecake layer. Using an electronic whisk, mix together all the ingredients for around 3 minutes until its smooth and thick and then pour over the brownie mix. 

This is the important part.. time to drizzle those blackberries. Do this carefully so that you do not disturb too much of the cheesecake later as we want to avoid the brownie batter. Once this is on top, swirl away using a toothpick or fork.

Bake this for around 22 minutes, I always check my baking every 10 (I have an irrational fear of ruining it, I love far too much to risk that!) You will know once it is cooked as the cheesecake layer will begin to turn a slight golden brown and the top will become slightly firm but bouncy! if you are like me and love a gooey brownie, if you do the knife test, it should be ALMOST clean!!

Then ta daaaa you've done it - now let it cool off before enjoying.
