Dippy Eggs, smashed Avo toast, Halloumi and Bacon

An actual accidental masterpiece. Do you ever have those days where you just need to use up the contents of the fridge? That is EXACTLY what happened here!


  • 2 medium organic eggs
  • 1/2 ripe avocado
  • 1 slice seedy bread
  • 1/4 block halloumi
  • 2 rashers bacon
  • sesame seeds

How to:

Pop the eggs into a boiling pan of water for roughly 8-10 minutes but only simmering or you will over do the eggs and that in itself is devastating (for me anyway, I love a runny yolk!) while they are cooking pop the bacon and halloumi under the grill and check regularly. When you have around 3-4 minutes to go put the bread down to toast and peel the avo. 

Its essential to get the timing just right, as the toast pops up the eggs should be done just about. Let the eggs cool slightly before opening them up. While they do, top the toast with the avo and halloumi, pop the bacon on the side and then crack some chilli or black pepper over the top and thoroughly enjoy!
