Whether it be, breakfast, lunch, dinner or a hearty snack, pancakes are always a winner! I used to see them as a treat but actually, they can be good for you! I also believe in having a balanced approached to all areas of my life, so where eating is involved you cannot beat a healthy indulgent and completely satisfying stack of pancakes!
- 2 eggs
- 30g oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 30 ml almond milk
- Scoop of protein powder (optional, but it gives it an amazing texture and taste)
- 1 tsp vanilla extract (optional)
- Toppings: Go wild! My usuals include; frozen raspberries, greek yoghurt, honey or maple syrup, selection of nuts.
Blend it all up and cook in coconut oil! I will admit, I never used to be able to make them and it used to be highly frustrating as they would with stick to the pan or burn. So here are my top tips; heat up the pan REALLY hot (be careful not to burn yourself) and then turn it right down to minimum before putting the mixture in. The pancake will be ready to flip when you start to see little bubbles in the top so be patient. Make sure you keep putting a little coconut oil in there before every pancake. Lastly, make sure you have a good pan, this is essential!!
