Baked eggs in a portobello mushroom wrapped in bacon

So I woke up and had no idea what I fancied for breakfast! The toss up between sweet and savory... So after staring into the fridge looking for inspiration for at least 3 and a half minutes that's when this idea struck me with the need to 'use up' the ingredients.

Its such a yummy combo I HAD to share.


  • 2 portabello mushrooms
  • 2 rashes of Bacon per mushroom
  • Goats Cheese (optional)
  • Fresh Chili
  • Fresh Basil
  • Sides (optional) Asparagus, tomatoes (or anything you fancy!)

Preheat the oven to 180 degrees. Line a baking dish with foil and remove the stems and pop in the mushrooms wrapped in bacon topped with a little goats cheese for 20-25 minutes but keep checking them. Once done, crack the eggs (being careful they don't break or fall off the mushroom). Bake for around 7 minutes or until done. In the last few minutes steam the sides and cut the tomatoes.

Top with Chili and basil. Enjoy!!! If you're like me and love a runny yolk make sure you dont over bake them as you then get the best of both worlds!!
