Healthy Crepe Pancakes

So here we have another way to fuel your pancake day. Since its one of my most favourite days of the year - I would count down the days until I could feast on pancakes until i couldn't move and be in competition with my sister on who could eat the most. My poor mum would be slaving away flipping pancakes as fast as she possibly could with two gannets at the table eating inhaling them quite literally.

I have post up pancakes before including protein, clean, savoury so I wanted to do something new. These are still healthy (aside from maybe the mountains of Nutella and crunchy Biscoff spread. But, lets face it if you can't indulge on pancake day when can you? Although I am also all for keeping them healthy of course.

These are super easy, super quick, seriously moorish!

Ingredients (makes 8-10 dependant on the size of your pan)

  • 2 eggs
  • 1 cup almond milk
  • 1 cup flour of choice (plain, GF, coconut, almond)
  • 2 tbsp melted butter
  • Pinch of salt

Method

It couldn't be easier, I popped all of the above in my NutriBullet and whizzed it up. The key to pancakes its getting the pan super hot with a little coconut oil in (so please be careful) then turning the heat low to cook them and don't be tempted to flip them until they are ready and freely shuffle on the pan or things could get messy.

I add a little coconut oil each time I make a new pancake. Then you can go as wild as you wish with toppings.. me I LOVE PNB and Nutella as you know and also I found some Biscoff in the cupboard (if you haven't tried this you must get it in your life, although I warn once its open thats it... you will be eating it like a yoghurt!)

Make sure you totally enjoy pancake day with whatever creations you come up with - I can't wait to see them.. I know I have and will probably extend it into an entire week...
